My kitchen is full of vegetables. It’s really fun to find new ways to use them. Pumpkin soup, souffle, salads, stir-fries, etc. We canned 12 quarts of peaches, although I’ve been freezing everything else.
(I tend to do a cost analysis of things, and canning takes too long. If you factor in time spent working, my canned peaches cost, at a minimum, $5 a quart. Freezing is generally much more simple, and I have a good chest freezer to keep everything.)
